I can't believe there are now only a few days to go before Bristol is once again the centre of the vegan universe, as VegfestUK comes home. I'm proud to have had some involvement in most of the VegfestUK events since the early Bristol Vegan Fayres. In fact, back in 2005, Tim Barford offered me the opportunity to run our first ever vegan catering stall, as the main caterer at the Bristol Vegan Fayre of October 2005. That was the event which saw the launch of Shambhu's - now an established award-winning Vegan Society registered catering and education business, based in London.
I'm grateful that Tim and Alan continue to invite me back to be involved in their superb VegfestUK events, which go from strength to strength every year.
VegfestUK events are clearly a magnet for some great speakers and activists from around the world, and this makes them powerful and inspiring educational shows, especially for those new to the vegan approach.
For the last few years at VegfestUK, my main role has been to deliver cookery demonstrations - another key educational part of VegfestUK events. There are so many delicious possibilities with vegan cuisine, and it's always a pleasure to demonstrate some of my ideas, which in turn hopefully inspire people to go and explore the wonderful world of tasty & healthy vegan cooking.
Over the years, I've delivered vegan cookery demonstrations at all the VegfestUK events (Brighton, Bristol, London, Glasgow) and at various prominent food shows (e.g. Natural Products Show, V-Delicious, Eden Project's Harvest Festival) and abroad in Malaga and Dubai.
The themes of my previous demonstrations have included Indo-Oriental fusion cuisine, African fusion cuisine, vegan sweets & treats, savoury whole grain/pulse pancakes, chutneys & pickles, and masala burgers.
This year, my theme for VegfestUK is bananas. In my demonstration, I'll give the audience a taster of how versatile this tropical favourite is as a main cooking ingredient, to produce some truly mouthwatering and nutritious meals. You might also pick up some interesting banana-related trivia on the way, so be sure not to miss my session :-)

The vegan cookery demonstrations on offer by many inspiring vegan chefs at all the VegfestUK shows are great opportunities to expand one's vegan culinary creativity. You may then find you'd like more in-depth, interactive and attentive tuition, which is where cookery classes come into their own. I'm actually teaching a variety of classes this year, including some for children.
