INTERVIEW with Chantal Di Donato

In this series of interviews, we are speaking with all the speakers who will be presenting at VegfestUK London 2016, asking them about their current projects, goals, publications and favourite vegan food and other vegan activists.


Today we have Chantal Di Donato, vegan health coach at Live Lean Health, Qualified Diet and Nutrition Advisor, Author & Inspirational Speaker  and Yoga Teacher, who will be demonstrating some of her favourite raw vegan recipes with her audience in the Living Raw Zone at VegfestUK London 2016.



What's your current main project?

At the moment I am focused on the release of my latest book, Innocently Sweet. It has been a long journey because I had taken some detours on the way, changing the collaboration with another chef in Australia and identifying the best publisher for my work. From the book what I would like to create is an online course to help people learn how to create amazing vegan cakes and possibly guiding them into building their own business. I think people need to learn how to create beautiful things with food that is fun and nourishing. 



Have you had anything published recently (or recorded)?

After my first book, the Live Lean Health Plan, which speaks about nutrition in general, I have decided to focus more on vegan desserts. The reason is that a lot of vegans disregard their health and are vegan for the animals, but to me we are all part of one ecosystem and we need to look after ourselves all the time. With Innocently Sweet people can learn about sugar, the different aliases, what it does to us; what we should eat and how and also have fun preparing a great selection of delicious yet nourishing desserts! Having fun in the kitchen and preparing kind desserts can also bring people together so I hope couples or parents take advantage of this to extend the knowledge and share the delicious treats to their families and loved ones. 



Anything you're particularly interested in or concerned with at the moment?

I am always concerned with the consciousness of humanity. With everything happening around us, wether it is politics, diet, environment, I feel that people often follow trends and fail to holistically connect all the dots. Veganism is one of those things. Of course some level of trend is good to get people involved and excited, but this gives some companies who are not conscious at all the opportunity to create vegan products just to attract a new target market. So I am truly working hard to promote small conscious vegan businesses to support people who truly care about what they are doing; that have a mission and stick to it, not for profit but because they care about what they do. I also believe that supporting small companies instead of huge corporations is good for the planet; it gives opportunities and creates the right kind of awareness, which ultimately goes back to health. Using better products, allowing vegans to connect the dots often missing in trends. 


Which other vegan activists are currently interesting you the most?

I am a huge follower of Victoria Moran because her activism is impacting people through books; her academy (education) and all other wonderful things she does, like her podcast and participation in animal welfare charities etc. She was one of my lecturer at IIN and I just connected with her ethos immediately. I also have a friend who I absolutely support and who is an inspiring activist: Phoebe Frampton, who started the Earthlings experience here in London. She is passionate and dedicated and manages to group the most awesome people to go with their laptops on the tube and showing the documentary, Earthlings, to non-vegans who otherwise would never be aware. Sometimes people need to SEE animal suffering to understand it! 


What’s your current favourite vegan food experience?

I always like experiencing new places, especially when they open close to where I live. So I often go to places like Redemption, Farmacy and Nama in Notting Hill. But truth to be told, I love cooking or preparing food (when I eat raw) and so the best restaurant seems to be our house! I try and follow seasons to give my body what it wants. Although summer is not the warmest here, I’m enjoying a lot of raw foods, especially funky salads or raw soups! 


What's your current ambition / goal / dream to achieve?

I am truly working hard to become the vegan nutrition expert out there. Not for anything but the passion I have for real food, and for the kind lifestyle I have chosen. I want people to be healthy vegans and feel so satisfied with their food that they will continue the evolution, exploring and experimenting with new ingredients and lifestyle. I also work on natural vegan skincare as I think what goes on our bodies and inside is equally important! One day I will want to have my own TV or Radio show and continue writing and publishing books to inspire people out there who are ready for positive change!
